Recipe: Caramel Popcorn

Something about this time of year just makes us crave caramel popcorn. Maybe it’s the pumpkin patches and the fall festivals and their funnel cakes and candied applies.. Well now you don’t have to venture out for this fall favorite, you can try this easy recipe at home (all year long,)  and my kids loved helping out!

Homemade Caramel Popcorn

What you’ll need:

5 qts Freshly Popped Popcorn (roughly 3 bags)
1 c. Butter
2 c. brown sugar, firmly packed
1/2 c. Light Corn Syrup
1 t. Salt
1 t. Vanilla
1/2t. Baking Soda
Nuts (nuts optional)
Large Roasting Pan

What You’ll Do:

Preheat Oven to 225 degrees

Place Popped Popcorn in lightly greased roasting pan

Melt butter in large saucepan, stir in sugar, corn syrup and salt

Cook over medium heat, stirring frequently until candy thermometer reads 248 degrees.

Remove from heat and stir in vanilla and soda.

Pour caramel mixture over popcorn (add nuts) and stir well

Bake at 225 for 1 hour, stirring every 15 minutes.

Once finished, store in airtight container.

Enjoy!
